Cheesecake Brownies

Cheesecake Brownies – The Best of Both Worlds

If you’ve ever found yourself torn between a fudgy brownie and a creamy cheesecake, this recipe has your name all over it. Cheesecake Brownies combine the rich, chocolatey goodness of brownies with the tangy creaminess of cheesecake in one decadent bite.

They’re the kind of dessert that looks bakery-fancy but is surprisingly easy to make at home. Perfect for potlucks, holidays, or whenever you need a dessert that impresses without a lot of effort.

🍫 Cheesecake Brownies Recipe

Ingredients

For the Brownie Layer:

  • 1 cup unsalted butter, melted

  • 2 cups granulated sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1 cup unsweetened cocoa powder

  • ½ tsp salt

For the Cheesecake Layer:

  • 8 oz cream cheese, softened

  • ⅓ cup granulated sugar

  • 1 large egg

  • ½ tsp vanilla extract

Instructions

  1. Prepare the Oven

    • Preheat to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.

  2. Make the Brownie Batter

    • In a large bowl, whisk together melted butter and sugar until smooth.

    • Add eggs and vanilla; whisk until glossy.

    • Stir in flour, cocoa powder, and salt until just combined (don’t overmix).

  3. Make the Cheesecake Batter

    • In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.

  4. Assemble the Brownies

    • Pour most of the brownie batter into the prepared pan, spreading evenly.

    • Spoon cheesecake mixture on top in dollops.

    • Add the remaining brownie batter in spoonfuls, then swirl gently with a knife for a marbled effect.

  5. Bake

    • Bake for 35–40 minutes, or until the center is set but still slightly fudgy.

    • Cool completely in the pan before slicing.

Tips for Perfect Cheesecake Brownies

  • Use room-temperature cream cheese to avoid lumps.

  • For extra fudgy brownies, slightly underbake and let them finish setting as they cool.

  • Chill before slicing for neat, clean squares.

  • Add a sprinkle of mini chocolate chips for extra richness.

Variations to Try

  • Raspberry Swirl: Add raspberry jam swirled into the cheesecake layer.

  • Peanut Butter Cheesecake Brownies: Mix peanut butter into the cheesecake batter.

  • Mocha Twist: Add a teaspoon of instant espresso powder to the brownie batter.

  • Oreo Cheesecake Brownies: Stir crushed Oreos into the cheesecake layer for crunch.
