Instructions

  1. Preheat the Oven

    • Set oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.

  2. Prepare the Meatloaf Mixture

    • In a large bowl, combine ground beef, breadcrumbs, onion, egg, milk, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.

  3. Bake the Cupcakes

    • Divide mixture evenly among muffin cups, pressing down gently.

    • Bake for 20–25 minutes, or until cooked through (internal temp 160°F/71°C).

  4. Make the Whipped Potato Topping
